This was my favourite treat when I was a child. A great after school pleasure or delicious for dessert. Jenny Michelmore
Preparation: 30 minutes
Cooking time: 10 minutes
4 cups milk
1 packet Arnotts’ Sao biscuits
2 tablespoons sugar
4 tablespoons custard powder
1 tablespoon butter
1 teaspoon vanilla essence
Make custard according to the instructions on the packet then add butter and vanilla essence and beat thoroughly with a wooden spoon. Cool slightly.
Place one layer of Sao biscuits in a slice tin and pour mixture evenly over the biscuits. Cover with more biscuits on top. Cool in the fridge for 2 hours then ice top with passionfruit icing.
Tips: Shortcrust pastry can be used instead of the biscuits. Use half or full pulp of a passionfruit for icing.
